Vegan Orange and Almond Muffins


- 2 Cups of whole meal flour (Sub 1-1 Gluten Fre

e Baking Flour if needed)

- 2/3 Cup Coconut Sugar or Monk fruit sweetener

- 1/4 tsp of Baking Soda

- 2 tsp Baking Powder

- a pinch of salt

- Half a cup melted Coconut oil

- 1 Cup of freshly squeezed orange juice

- The zest of a whole orange

- a 1/4 cup of chopped almonds


  1. Pre-heat your oven to 180 C /350 F, prepare 12 hole muffin tin with baking cups

  2. Sieve all the dry ingredients in a bowl

  3. In a separate bowl mix the wet ingredients and zest

  4. Add the wet ingredients to the dry and mix well.

  5. Fold in the nuts

  6. Divide between baking cups and bake for 20 mins

  7. Remove from the oven and cool or eat warm
