An Introduction to Earthy Cakes and Sweets

For as long as I can remember, people have told me that I should write. My mum sent me on writing courses when I was young and it is something I have always wanted to do.

But, as life does, it takes you on another journey to teach you the lessons you need to learn, and if you are lucky, one day in the future the life you dreamed about might just come true.

I feel like the last year and a half has been filled with a few pot's of gold, one of which is my cake business; Earthy Cakes and Sweets. I have always loved baking, and my passion for food and baking intensified when I became a mother, I had a drive in me to find healthier and interesting alternatives to feed my little one's. As they had their birthdays a creative side of me awoke that I never even knew existed. Creating their birthday cakes were some of my proudest moments fueled by those big shiny eyes and smiles, I knew I had found something I would never wanted to stop doing.

I am so grateful to be able to do something creative, something I truly love and something I am proud of every day. That is thanks to every single person who palaces an order form me.

And so as I am on a roll I think, why stop there, I have a platform and I have a lot to share, transitioning from being vegetarian most of my life to vegan 4 years ago I have learnt a lot. i absolutely love showing others how easy and delicious a plant based lifestyle can be - no judgement to those who choose other ways of living though.

Vegan Orange and Almond Muffins

Ingredients: - 2 Cups of whole meal flour (Sub 1-1 Gluten Fre e Baking Flour if needed) - 2/3 Cup Coconut Sugar or Monk fruit sweetener - 1/4 tsp of Baking Soda - 2 tsp Baking Powder - a pinch of salt
